New restaurant arises from the dream of two chefs from Ourense, Julio Sotomayor and Daniel Guzmán, to create a space in which to enjoy a single protagonist: the product.
Explaining the careers of these two chefs from Ourense separately would be completely impossible since they have been cousins and friends since childhood. Even as children, they grew up in an environment very attached to the stove, with great cooks in their family, among whom the figure of Tito Guzmán stands out.
On a professional level, the two studied at IES Vilamarín, almost simultaneously, and from this point they began their journey through different restaurants that awakened their passion for this profession and shaped their idea of cooking.
In the case of Daniel, he went to the Catalan coast very young, while Julio joined the staff of the Galileo restaurant near the city of Ourense.
A short time later, with Dani already back, they met in a historic restaurant in the capital of Ourense where they were lucky enough to deal with the best quality Galician food.
They separated again, Julio, at just 23 years old, took the reins of the Mosteiro de San Clodio, while Dani spent three years at the restaurant A Rexidora in Ourense.
Shortly after, Julio went to Prague to collaborate in the opening of the five-star Hotel Thalía as head chef.
Fate brought them together again at the Barandal restaurant in León, a time when they were immersed in the traditional cuisine of the area.
From this moment they lived a period of 6 years in which Julio went to Catalonia and was lucky enough to work with people of the renown of Santi Santamaría and Iván Sola, at the Can Fabes restaurant in San Celoni; in addition to directing two kitchens of the Paradis Group, to end his journey, in these lands, at the Castell D'Empordá. In this period, Dani worked with Marcelo Tejedor and Iván Domínguez in the Galician capital, in addition to teaching and recording the program "Ata a Cociña!" of Vtelevision.
During this time, from a distance, the idea of setting up a restaurant together in their hometown, where they could embody their knowledge and their love for cooking, and finally... put down roots.
